Tonight was my debut at the Arms cooking for the Hudson River Valley Art Workshops. Barbara Nechis was teaching. I served:

Pumpkin Soup with a Escargot Butter Crouton with White Truffle Oil
Maple/Soy Salmon
Peas with Escargot Butter
Hassleback Potatoes with Parmigiano cheese and a hint of the Escargot Butter
Raspberry Mousse

This was accompanied by Cuban Bread with poppy seeds.

I paired this with a 2001 Diel Spatlese, nice. So nice.

I paired the Mousse with port, naturally. Nothing came back. Poor Spotty had no scraps at all. I had to give me some of my old Schiaciatta bread I’ll be using for bread crumbs. Poor puppy.

What’s for dinner tomorrow? Well, that’s a surprise here at the Arms. There’s always something special…
